Pecan Raisin Bundt Cake

Bundt cake is one of my favorite cakes to bake. In honor of the holidays, I baked this cake using pecans and raisins. This cake is perfectly balanced with sweetness, it’s dense yet soft, and beautifully golden brown on the outside. I used white whole wheat flour for this cake and the texture is just perfect. The white whole wheat flour is a healthier option than all purpose flour.

I used pecans, but you can use walnuts. There is something special about pecans and holiday times, that I couldn’t not used pecans. When using raisins in cakes, make sure they are the smaller ones.

In any baking, you want your ingredients to be at room temperature so make sure the eggs and the yogurt are at room temperature.

I used one of my favorite bundt cake pan by Nordic Ware. This is a perfect size and the quality is superb and will last you for years. To ensure your cake slides off easily and doesn’t break, you want to make sure you grease the pan very carefully. I used olive oil spray and used a brush to ensure all edges and sides are covered with oil. You can also add some flour to your pan before adding the batter. For me, I usually skip adding the flour, because I think the oil gets the job done.

Pecan Raisin Bundt Cake

Ingredients
  

  • 4 large eggs
  • 3/4 cup extra virgin light olive oil
  • 1 tsp pure vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup plain Greek yogurt
  • 1 tbsp baking powder
  • 2 cups white whole wheat flour
  • 1/4 cup pecans
  • 1/4 cup raisins
  • 1 tbsp brown sugar

Instructions
 

  • Preheat the oven at 350°F and oil the pan.
  • In a small bowl add pecans, raisins, and brown sugar and mix and set aside.
  • In a another bowl, add baking powder to the white whole wheat flour and set aside.
  • In a standing mixer or using a hand held mixer, mix the eggs and sugar until well combined.
  • Add olive oil, vanilla extract, and Greek yogurt to the mixture and mix.
  • Add the batter to the pan.
  • Add the pecan, raisin, and brown sugar on top of the batter and using a knife swirl the mixture.
  • Transfer to the oven and bake for 45 minutes.
  • Once baked, removed from oven and after 15 minutes remove the cake from the pan to prevent the cake from breaking or sticking to the pan.
