INGREDIENTS for Blood Orange Arugula Salad
- Blood Oranges
- Arugula: spring mix or baby kale will also be a great option
- Walnuts: almonds will be great as well
- Blueberries
- Dried Cranberries
- Sunflower Seeds
- Pumpkin Seeds
- Feta cheese: goat cheese will also be great

- Olive oil
- Red Wine Vinegar
- Dijon Mustard
- Honey
- Salt & Pepper
Blood Orange Arugula Salad
This blood orange arugula salad is made with walnuts, feta cheese, pumpkin seeds, sunflower seeds, dried cranberries, blueberries, and vinaigrette dressing. It’s the perfect winter salad, vegetarian and gluten-free!
Ingredients
- 3 cups arugula
- 2 blood oranges, peeled and sliced
- ½ cup blueberries
- ¼ cup walnuts
- 2 tablespoon pumpkin seeds
- 2 tablespoon sunflower seeds
- 2 tablespoon dried cranberries
- ¼ cup feta cheese
Dressing Ingredients
- 2 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dijon mustard
- 1 tsp honey
- salt & pepper
Instructions
- In a large bowl, add arugula, blood orange slices, blueberries.
- Top it off with walnuts, dried cranberries, pumpkin seeds, sunflower seeds, feta cheese.
- In a small bowl, add all of the dressing ingredients and mix until well combined and our over the salad. Toss together and serve immediately.
