Amaretti Cookies

Crunchy on the outside, soft on the inside! Classical Italian cookies.

Ingredients
  

  • 2 egg whites
  • 2 ½ cup almond flour
  • 1 cup granulated sugar
  • ¼ cup lemon juice
  • 1 tsp almond extract
  • teaspoon salt
  • confectioner's sugar (optional)

Instructions
 

  • Preheat oven to 300 degrees F and line a baking pan with parchment paper.
  • In a medium size bowl, add almond flour, salt, sugar and mix until well combined.
  • In a standing mixer or using a hand mixer, mix egg whites with lemon juice until it holds a soft peak.
  • Add almond extract to the egg whites and lemon juice and mix.
  • Add the wet ingredients to dry ingredients and fold the mixture until well combined.
  • Using a small ice cream scoop or teaspoon portion out the dough.
  • Roll each cookies into small balls and roll into powdered sugar and place on the baking sheet.
  • Bake the cookies for 30-40 minutes or until slightly golden. Mine baked at exactly 35 minutes.

Notes

I had to roll my cookies in the powder sugar twice because the dough will absorb the sugar by the time you're doing rolling the cookies into balls! You can add lemon zest to the recipe and even sliced almonds on top of the cookies.
