Chocolate Peppermint Cookies

- 1 cup unsalted butter
- 2 large eggs
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 teaspoon pure vanilla extract
- 2 teaspoon peppermint extract
- 1 tsp baking soda
- 1 ⅔ all purpose flour
- 1 cup unsweetened cocoa powder
- melted milk or white chocolate for dipping
- chopped white peppermint chocolate for topping
Preheat oven to 350 degrees F. Line a baking pan with parchment paper and set aside.
In a bowl of electric mixer using paddle attachment or hand mixer, mix the butter until it becomes light and fluffy.
Add one egg at a time and whisk until mixed and combined.
Add vanilla and peppermint extract and mix.
Add brown sugar and white sugar to the mixture and mix until well combined.
In a medium bowl, add baking soda, all purpose flour and cocoa powder and whisk until combined and add to the wet ingredients and mix until well combined.
Using a small ice cream scoop, portion dough into small balls and place on cookie sheet.
Bake cookies for 8-10 minutes and allow cookies to completely cool before dipping them into melted chocolate.
Once cookies are cool, melt the milk/white chocolate in microwave and dip the cookie in the chocolate. Add the chopped chocolate on top and allow cookies to cool before enjoying them!
