Cuisine Mediterranean
- 1 lbs chicken breast, cubed
- 2 teaspoon smoked paprika
- 1 teaspoon paprika
- 1 tablespoon dried oregano
- ½ teaspoon red pepper flakes
- salt & black pepper
- 2 tbsp olive oil to marinate the chicken
- olive oil to cook the chicken
Salad
- spring mix
- olives
- cherry tomatoes
Greek yogurt feta sauce
- ½ cup Greek yogurt
- 8 oz feta cheese
- 1 teaspoon garlic powder
- 2 tablespoon lemon juice
- ⅛ cup fresh dill, chopped
In a bowl add the chicken, seasonings, lemon juice, and olive oil. Make sure the chicken is mixed well with all the seasonings and marinate it for 20-30 minutes in the refrigerator.
While your chicken is marinating, make the sauce. In a food processor, add the yogurt, cheese, garlic powder, dill, and lemon juice and blend until smooth and creamy. Refrigerator the sauce until you're ready to serve. In a large pan over medium heat, add olive oil and let it heat up before adding the chicken. Add the chicken to the pan and let it cook on both sides or until the internal temperature reaches 165 degrees F. The chicken needs to fully cook so let it cook! To make the salad, add spring mix or lettuce, add the chicken, cherry tomatoes, olives and top it off with the sauce. You can even squeeze some lemon juice on top!
