Healthy Greek Yogurt Blueberry Muffins

Easy and healthy Greek yogurt blueberry muffins. These muffins have no refined sugar and made in just one bowl! Healthy and delicious muffins for breakfast or afternoon snack.

Ingredients
  

  • 1 cup Greek yogurt
  • 1 egg
  • ¼ cup honey
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ¼ cup unsweetened almond milk
  • 1 teaspoon baking powder
  • ½ tsp baking soda
  • teaspoon salt
  • ½ teaspoon cinnamon
  • 1 ¾ cup white whole wheat flour
  • 1 cup blueberries

Instructions
 

  • Preheat oven nto 350 degrees F and line a muffin tin or spray with non-stick baking spray.
  • In a bowl, add Greek yogurt, egg, honey, melted coconut oil, vanilla, and almond milk and mix until well combined. 
  • Add the flour, baking powder, baking soda, salt, cinnamon and mix the batter. Add the blueberries and fold the batter, do not over-mix! 
  • Transfer the batter using an ice scoop to the muffin tin and bake for 17-20 minutes or until toothpick comes out clean. Let the muffins cool before enjoying!
