Low Carb Chicken Quesadilla
Easy, quick, and healthy low carb chicken quesadillas are the perfect weeknight dinner recipe. This recipe requires simple ingredients and it is perfect with left over chicken!

- 2 lb cooked chicken breast, shredded
- 8 almond flour tortilla
- ½ cup cheese, shredded
- ¼ cup greek yogurt
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon red chili flakes
- 1 tablespoon hot sauce
Creamy Sauce
- 1 cup Greek yogurt
- ⅛ cup cilantro, chopped
- ¼ cup green onion, chopped
- 1 lime, juiced
In a food processor add the Greek yogurt, lime juice, green onion, cilantro or parsley and blend until smooth and creamy and set aside.
In a bowl add the shredded chicken, Greek yogurt, hot sauce ,and seasonings and mix until the chicken and seasonings are well combined.
Place a pan over medium heat for 30 seconds or until pan is hot.
Place the tortilla in the pan, add cheese, the chicken filling, more cheese and cilantro and top it off with another tortilla. Cook for 3-4 minutes and flip and cook for additional 2-3 minutes.
Top off your quesadillas with your favorite toppings or just dip them in the creamy sauce and enjoy!
