- 1 lb boneless skinless chicken thigh
- 1 tablespoon olive oil
- 1 teaspoon oregano
- 1 teaspoon paprika
- ½ teaspoon red pepper flakes
- 2 tablespoon butter
- ½ onion, diced
- 2-3 cloves garlic, minced
- 1 cup milk
- ½ cup water
- 1 cup dry orzo
- 2 cups spinach
- ½ cup sun-dried tomatoes
To a bowl add the chicken to a bowl, olive oil, oregano, paprika, and red pepper flakes and toss the chicken until it is well covered with seasoning and set it aside for 10-15 minutes.
In skillet, melt the butter and sear the chicken on both sides, the chicken will continue cooking in the oven. Remove the chicken from the pan.
Add the chopped onion and garlic to the pan and sauté.
Add the dried orzo and toast for 3-4 minutes.
Turn the heat to low and add the milk and stir, because we don't want the milk to clump. Add the water and lastly add the spinach, sun-dried tomatoes and chicken and all the juices from the chicken. Bring to simmer and transfer the skillet to preheated oven (400 degrees F) and continue cooking until chicken is fully cooked.
