- 1 cup softened unsalted butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 2 ¾ cup all purpose flour
For the topping
- 4 tablespoon sugar
- 2 teaspoon cinnamon
Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
To flour, baking soda, cream of tartar, and cinnamon in a large bowl and mix together and set aside.
Using a hand mixer or standing mixer (using paddle attachment), beat the butter and sugar until it becomes light and fluffy.
Add the egg, egg yolk, and vanilla extract and mix until well combined.
Add the flour mixture and mix until well combined.
Use a small ice cream scooper or tablespoon to portion out the cookie dough. Form balls into 1-2 inches wide. Roll the cookies in cinnamon sugar and place them on the lined baking sheet. Bake the cookies for 10 minutes and let them cool for 5 minutes, because they will continue baking.
