INGREDIENTS for Parmesan Turkey Meatballs
- Ground Turkey
- Parmesan Cheese
- Egg
- Onion
- Breadcrumbs
- Green Onion
- Cilantro
- Tomato Paste
- Diced Tomato
- Dried Oregano
- Dried Thyme
- Salt & Pepper
- Olive Oil
- Chicken Stock
INSTRUCTIONS for Parmesan Turkey Meatballs
- In a large bowl, add turkey, egg, parmesan cheese, bread crumbs, half of the onion, green onion, oregano, thyme, salt & pepper. Using your hands combine all the ingredients together until well mixed.
- Form into meatballs using an ice cream scoop.
- In a large pan over medium heat, add olive oil and brown the meatballs on all sides.
- To the pan add the other half of the onion, tomato paste, diced tomato, and chicken stock and bring to boil then simmer for 10-15 minutes. Stirring occasionally.
- Sprinkle some cilantro or parsley and grated parmesan cheese and serve over pasta or rice.

They will last in airtight container in the fridge for up to 4 days and yes, absolutely you can freeze them.

Yes, you can even do half chicken and half turkey or if you’re not a fan of turkey, start with half meat and half turkey!

- ¼ cup shredded parmesan cheese
- 1 yellow onion, diced
- ⅓ cup bread crumbs
- ½ cup diced tomato can with juice
- 1 large egg
- 2 tablespoon tomato paste
- ¼ cup green onion, chopped
- ⅛ cup cilantro, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- salt & pepper
