These cookies are similar to sugar cookies, but they have a special ingredient, cream of tartar! Do not SKIP this ingredient. Cream of tartar gives the cookies the texture.
How to make Snickerdoodle Cookies:
- Using a hand mixer or standing mixer, beat the butter and sugar until light and fluffy. If you’re using a standing mixer, use the paddle attachment.
- Add vanilla extract and egg and beat until well combined.
- In a separate bowl, add flour, baking soda, cream of tartar, and cinnamon and mix. Add the flour mixture to the wet ingredients and mix until well combined.
- You can chill this dough for 20-30 minutes or you can start rolling it into small balls right away! If your dough is too soft, go ahead and chill the dough.
- Using a small ice cream scoop or 1 tbsp spoon, form the dough into small balls and roll into sugar and cinnamon mixture. This mixture is 2 tbsp of sugar and 2 tbsp of cinnamon.
- Place the cookies on a lined baking sheet. You can press them down with a fork or leave them as balls.
- Bake them at 375 degrees F for 10 minutes or until slightly golden. These cookies will continue baking once removed from oven, so do not over-bake them in the oven.

- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 2 tsp pure vanilla extract
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp cream of tartar
- 2 3/4 cup all purpose flour
For the topping
- 4 tbsp sugar
- 2 tsp cinnamon
Instructions
- Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
- To flour, baking soda, cream of tartar, and cinnamon in a large bowl and mix together and set aside.
- Using a hand mixer or standing mixer (using paddle attachment), beat the butter and sugar until it becomes light and fluffy.
- Add the egg, egg yolk, and vanilla extract and mix until well combined.
- Add the flour mixture and mix until well combined.
- Use a small ice cream scooper or tablespoon to portion out the cookie dough. Form balls into 1-2 inches wide. Roll the cookies in cinnamon sugar and place them on the lined baking sheet. Bake the cookies for 10 minutes and let them cool for 5 minutes, because they will continue baking.
