I personally love easy, quick, and healthy recipes and this is one of those recipes! This breakfast potato sausage casserole recipe will be perfect for when you have guests over, brunch with the girls, Mother’s Day, or even just a quick weeknight dinner.
Ingredients
- Sausage: I used chicken sausage
- Potatoes: I used baby creamers potatoes, but use whatever you have
- Eggs
- Italian seasonings
- Avocado oil: olive oil will also work
Instructions for breakfast potato sausage casserole
- Add avocado oil to your oven safe skillet and place on medium high heat.
- Add the sliced potatoes to the skillet and Italian seasonings and cook until they get golden brown. Do one layer of potatoes at a time, do not overpack the skillet. Cook the potatoes and remove from the skillet.
- Add the diced sausage to the pan and cook for 2-3 minutes or until they get golden. The sausage I used were already cooked so it didn’t take long for them to get color on both sides.
- Remove the sausage from the skillet and start laying your casserole. Layer the potatoes first, then sausage, potatoes, and sausage again.
- In a small bowl, crack 4 eggs and whisk. Add the eggs to the skillet and transfer to a preheat oven of 350 degrees F. Cook the casserole until golden and the eggs are fully cooked.
- Remove from the oven and let it cool before enjoying!

- 4 eggs
- 1 1/2 lb baby creamers potatoes, sliced
- 3 tsp Italian seasonings
- 2-3 tbsp avocado oil
