Chipotle Cauliflower Tacos

Spicy vegetarian Chipotle Cauliflower Tacos are quick, healthy, and made in one skillet in about 30 minutes. These tacos are saucy and spicy and topped with cilantro verde sauce.

I don’t think I’ve ever met someone who doesn’t like tacos. They are easy and very quick to make, making them a great weekday recipe. This recipe is gluten-free and vegetarian. You can even skip the cheese to make it dairy-free. So next time you’re having Taco Tuesday, invite your friends and impress them with these tacos! Not only they will be impressed, they’ll be asking you for the recipe. Now, let’s talk about the ingredients you’ll need to make these tacos.

INGREDIENTS FOR THE CAULIFLOWER TACOS

  • Cauliflower
  • Poblano Pepper
  • Onion: yellow or red
  • Avocado Oil or Olive Oil
  • Chipotle Peppers in Adobe
  • Red Enchilada Sauce
  • Dried Oregano
  • Crushed Red Peppers
  • Salt & Pepper
  • Feta Cheese: cotija cheese will work as well
  • Cilantro

INGREDIENTS FOR THE SAUCE

  • Avocado Oil Mayo: yogurt will work as well
  • Cilantro
  • Green Onions
  • Garlic
  • Honey
  • Lime Juice

INSTRUCTIONS FOR THE CAULIFLOWER

  1. In a large skillet over medium high heat, add avocado or olive oil.
  2. To the skillet, add cauliflower, diced poblano peppers and onion and cook for 5-7 minutes.
  3. Once the cauliflower has charred, add the chipotle peppers in adobe and enchilada sauce and bring to simmer.
  4. Simmer the mixture until the sauce starts to thicken and you’re ready to assemble your tacos!

LET’S MAKE THE CREAMY SAUCE

  1. To a blender or food processor, add mayo, cilantro, green onions, garlic, honey, lime juice and blend.
  2. The sauce will be creamy and smooth!

To ASSEMBLE THE CHIPOTLE CAULIFLOWER TACOS

  1. For tortilla I’m using almond flour tortillas, because they are dairy-free, gluten-free, grain-free and paleo.
  2. Smash an avocado and add it to the tortilla, add chipotle cauliflower, finished it with the creamy sauce, cheese, cilantro, and a squeeze of lime juice and enjoy!

Ingredients
  

  • 2 tbsp avocado or olive oil
  • 1/2 head cauliflower, cuts into florets, if cauliflower is small then 1 head
  • 1/2 poblano pepper or 1 small, diced
  • 1 onion, diced
  • 3 chipotle peppers in adobe, chopped
  • 1/2 cup red enchilada sauce
  • 1/2 tsp dried oregano
  • 1/2 tsp crushed red peppers
  • salt & pepper
  • cilantro for garnish
  • 1 lime
  • 1 avocado
  • feta cheese
  • 6 tortillas

Sauce

  • 2 tbs avocado oil mayo
  • 1 bunch cilantro
  • 1/4 cup green onions, chopped
  • 1 tsp honey
  • 1 lime, juiced

Instructions
 

  • In a large skillet over high heat, add the oil, cauliflower, poblano pepper, and onion. Stir occasionally until cauliflower starts to char, about 7-8 minutes.
  • Add the chipotle peppers, enchilada sauce, oregano, crushed red pepper, salt and pepper and 1/3 cup water.
  • Reduce the heat to medium and simmer until the sauce thickens.
  • In a blender, add the mayo, cilantro, green onions, honey, lime juice and blend until smooth and creamy.
  • Assemble the tacos, add smashed avocado on tortilla, add the cauliflower, top with sauce, cilantro, and feta cheese. Enjoy!
