Dinner Rolls

Instructions:

In a saucepan, add the milk and butter. Once butter is melted and milk is warm, remove from heat and add to standing mixer.

Add 2 tablespoon or 1 pack of instant yeast to the warm milk and butter mixture and let it sit for about 5 minutes or until mixture is slightly foamy. You can also add 1 tablespoon of sugar to speed up the process of foaming!

To the mixture, add the egg yolks, flour, sugar, and salt and using the dough hook, mix the mixture until everything is incorporated and mixed well together. This will take up to 10 minutes. Once the dough is ready, it will pull away from the bowl.

Add the dough to a bowl thats greased with some olive oil. Form the dough into a ball and some oil to the top to prevent it from drying. Cover the bowl and place in a warm space. I placed mine into an oven with the light on so keep it warm. The dough will double in size in about an hour or two.

Once dough is doubled in size. remove from the bowl and place onto your work surface (make sure you have added flour to the surface to prevent the dough from sticking).

Cut the dough into 12 equal pieces. You can also use a kitchen scale, if you want your pieces to be exact in size.

Line your pan with parchment paper or spray it with cooking spray so you can place the rolls onto the pan.

As you work with the rolls, make sure you cover the rest of the dough to prevent it from drying. Roll your balls and place them in the pan. Leave some space between them, because they will expand as they bake.

Once you’re done with your 12 rolls, cover them and let them rest for an hour or overnight before baking them. If you are letting them rest overnight, you will need to refrigerate them. In the morning, remove them from refrigerator and let them sit for about an hour before baking them. You want them to be in room temperature before baking them.

Place the pan the oven at 350 degrees F and bake them for 20-25 minutes.

Once baked, remove them from oven and brush them with melted butter and enjoy!

  • 2 tbsp yeast
  • 2 cups whole wheat flour
  • 2 cups all purpose flour
  • melted butter to brush on baked rolls
