Healthy Greek Yogurt Blueberry Muffins

Easy and healthy Greek yogurt blueberry muffins. These muffins have no refined sugar and made in just one bowl! Healthy and delicious muffins for breakfast or afternoon snack.

Blueberry muffins are always the answer when I want to bake something healthy. These muffins are soft, fluffy, and packed with blueberries. They are easy, healthy, and delicious! Let’s start with the ingredients!

Ingredients for Greek yogurt blueberry muffins

  • Greek yogurt: any plain yogurt will work.
  • Egg
  • Honey: adds some sweetness, maple syrup will also be a great option
  • Coconut oil: make sure it is melted, you can also use melted butter
  • Vanilla extract
  • Almond milk: any milk will work
  • White whole wheat flour: all purpose flour will also work, but we’re keeping them heathy with whole wheat flour
  • Blueberries: I used fresh, but frozen will work, just add more baking time
  • Cinnamon, baking powder, baking soda and salt

Instructions for Greek yogurt blueberry muffins

  1. In a bowl, add Greek yogurt, egg, honey, melted coconut oil, vanilla, and almond milk and mix until well combined.
  2. Add the flour, baking powder, baking soda, salt, cinnamon and mix the batter.
  3. Add the blueberries and fold the batter, do not over-mix!
  4. Line a muffin tin or spray with non-stick spray.
  5. Transfer the batter using an ice scoop to the muffin tin and bake at 350 degrees F for 17-20 minutes or until toothpick comes out clean.
  6. Let the muffins cool before enjoying!

Can I freeze the muffins?

Absolutely! Place them in an airtight container and freeze. Just microwave them for 10-15 seconds before eating. They are also great for meal prepping!

Can I substitute blueberries or chocolate chips?

YES! Raspberries will also be a great alternative.

Can I substitute all purpose flour for white whole wheat flour?

Yes, but white whole wheat flour is a healthier option!
