Easy, quick, and healthy low carb chicken quesadillas are the perfect weeknight dinner recipe. This recipe requires simple ingredients and it is perfect with left over chicken!
Do you have have left over chicken and don’t know what to do with it? I know I do! I always end up having left over chicken breast and since I hate throwing away food, I love to create recipes repurposing the left over chicken. This is a great recipe if you’re trying the keto diet, because we’re using almond flour tortillas!
Ingredients
- Chicken breast
- Almond flour tortillas
- Cheese
- Greek yogurt
- Cilantro or parsley
- Green onion
- Lime
- Hot sauce
- Smoked paprika, chili powder, red chili flakes
Instructions for the chicken quesadillas and sauce
Sauce:
- In a food processor add the Greek yogurt, lime juice, green onion, cilantro or parsley and blend until smooth and creamy.
Chicken Quesadillas
- In a bowl add the shredded chicken, Greek yogurt, and seasonings and mix until the chicken and seasonings are well combined.
- Place a pan over medium heat for 30 seconds or until pan is hot.
- There are two ways to make the quesadillas. One is by folding half of the tortilla onto the other half with the filling and the other is place all the filling and top it off with another tortilla so choose which one you want, I did both!
- Place the tortilla in the pan and add cheese, chicken, more cheese and cilantro and top it with another tortilla. Let it cook and get golden and flip to the other side.
- Top off your quesadillas with your favorite toppings or just dip them in the creamy sauce and enjoy!
What I love about this low carb chicken quesadillas recipe is that it is very adaptable. You can use beef instead of chicken. As for cheese, use whatever you love and have in your refrigerator. I highly recommend trying these almond flour tortillas, but if for whatever reason you love corn or flour tortilla then use those! I love using the almond flour tortillas, because they are a healthier alternative to other tortillas.
This is the perfect dinner recipe idea for a busy night or a fun meal with friends. Just build a quesadilla bar and have your guests make their own tortillas. Everyone will enjoy it and it is easy for everyone!

Ingredients
- 2 lb cooked chicken breast, shredded
- 8 almond flour tortilla
- 1/2 cup cheese, shredded
- 1/4 cup greek yogurt
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp red chili flakes
- 1 tbsp hot sauce
Creamy Sauce
- 1 cup Greek yogurt
- 1/8 cup cilantro, chopped
- 1/4 cup green onion, chopped
- 1 lime, juiced
Instructions
- In a food processor add the Greek yogurt, lime juice, green onion, cilantro or parsley and blend until smooth and creamy and set aside.
- In a bowl add the shredded chicken, Greek yogurt, hot sauce ,and seasonings and mix until the chicken and seasonings are well combined.
- Place a pan over medium heat for 30 seconds or until pan is hot.
- Place the tortilla in the pan, add cheese, the chicken filling, more cheese and cilantro and top it off with another tortilla. Cook for 3-4 minutes and flip and cook for additional 2-3 minutes.
- Top off your quesadillas with your favorite toppings or just dip them in the creamy sauce and enjoy!
