This One Skillet Creamy Sun-Dried Tomato Chicken with Orzo and spinach recipe is made in one skillet, which means less dishes and don’t we all love that! Your family will love this recipe and will ask for it over and over again! So let’s get to the ingredients.
Ingredients
- Chicken: I used boneless skinless chicken thigh, but you can use chicken breast
- Sun-dried tomatoes
- Spinach
- Milk: heavy cream or half & half will also work, but milk is a healthier option
- Orzo
- Onion
- Garlic
- Olive oil
- Butter: use olive oil if you like!
- Oregano, paprika, red pepper flakes
Let’s get to making the One Skillet Creamy Sun-Dried Tomato Chicken with Orzo
You’ll need a oven safe skillet! I love the my GreenPan, because they are non-stick and oven safe. If you have a cast iron, that will work great for this recipe.
Let’s marinate the chicken. To a bowl add the chicken to a bowl, olive oil, oregano, paprika, and red pepper flakes and toss the chicken until it is well covered with seasoning and set it aside for 10-15 minutes.
In your skillet, melt the butter and sear the chicken on both sides, the chicken will continue cooking in the oven. Remove the chicken from the pan and add the chopped onion and garlic to the pan. Cook the onion and garlic for few minutes and add the dried orzo. We want the orzo to toast a little! Turn the heat to low and add the milk and stir, because we don’t want the milk to clump. Lastly add the spinach, sun-dried tomatoes and chicken and all the juices from the chicken. Bring to simmer and transfer the skillet to preheated oven and continue cooking until chicken is fully cooked.

- 1 tsp paprika
- 1/2 tsp red pepper flakes
- 2 tbsp butter
- 1/2 onion, diced
- 2-3 cloves garlic, minced
- 1 cup milk
- 1/2 cup water
- 1 cup dry orzo
- 2 cups spinach
- 1/2 cup sun-dried tomatoes
Instructions
- To a bowl add the chicken to a bowl, olive oil, oregano, paprika, and red pepper flakes and toss the chicken until it is well covered with seasoning and set it aside for 10-15 minutes.
- In skillet, melt the butter and sear the chicken on both sides, the chicken will continue cooking in the oven. Remove the chicken from the pan.
- Add the chopped onion and garlic to the pan and sauté.
- Add the dried orzo and toast for 3-4 minutes.
- Turn the heat to low and add the milk and stir, because we don't want the milk to clump. Add the water and lastly add the spinach, sun-dried tomatoes and chicken and all the juices from the chicken. Bring to simmer and transfer the skillet to preheated oven (400 degrees F) and continue cooking until chicken is fully cooked.
