Flourless Peanut Butter Oat Cookies

These flourless peanut butter oat cookies are thick and chewy. They are gluten-free, flourless, refined sugar free and are perfect for breakfast on the go! These cookies only require 6 ingredients and are ready in under 30 minutes!

Ingredients
  

  • 1 cup creamy peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup rolled oats
  • ½ teaspoon baking soda
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. 
  • In a bowl, add peanut butter, eggs and vanilla and mix until smooth. 
  • Add the oats and baking soda and mix the batter. 
  • Lastly add the chocolate chips and mix. 
  • Roll the cookies into balls and flatten the top of the cookies with the palm of your hand. 
  • Bake the cookies for 8-10 minutes or until the edges begin to get golden brown. Let the cookies to cool before enjoying!
