These flourless peanut butter oat cookies are thick and chewy. They are gluten-free, flourless, refined sugar free and are perfect for breakfast on the go! These cookies only require 6 ingredients and are ready in under 30 minutes!
I don’t know about you, but I love desserts for breakfast and these cookies are perfect for breakfast! They are healthy so you won’t feel guilty for having a cookie for breakfast. They are basically protein cookies with all the peanut butter.
These cookies have no flour or butter, but I promise they are delicious!
Ingredients for the flourless peanut butter oat cookies
- Peanut butter: creamy or chunky will work, but make sure you use high quality peanut butter, natural is the best! The ingredients should only be peanuts and maybe salt, that’s all!
- Eggs
- Vanilla
- Oats: I used old fashioned rolled oats
- Baking soda
- Chocolate chips: I used dark chocolate chips
How to make the cookies!
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a bowl, add peanut butter, eggs and vanilla and mix until smooth.
- Add the oats and baking soda and mix the batter.
- Lastly add the chocolate chips and mix.
- Roll the cookies into balls and flatten the top of the cookies with the palm of your hand.
- Bake the cookies for 8-10 minutes or until the edges begin to get golden brown.
- Let the cookies to cool before enjoying!
Customize your peanut butter oat cookies
- This recipe calls for peanut butter, but use any nut butter you’d like. Almond butter will be a great substitute and you can use almond extract in place of vanilla extract if you use almond butter.
- For those of you with nut allergy, use Sunbutter!
- Get creative with these cookies, use raisins, walnuts, M&M’s or even coconut flakes. You can even dip them in melted chocolate or drizzle chocolate instead of adding chocolate chips.
- I didn’t add any sugar, but if you want to add some sweetness, add coconut sugar or brown sugar.

- 3/4 cup rolled oats
- 1/2 tsp baking soda
- 1 cup chocolate chips
