Gluten-Free Dark Chocolate Chip Blondies

Paleo, dairy-free, gluten-free, no refined sugar chocolate chips blondies! These cookie bars are soft, moist, and packed with dark chocolate chips.

If you’re like me and enjoy desserts, but want healthier options, then you’ve found your new favorite recipe. I don’t think I’ve ever met someone who doesn’t like chocolate chip cookies, but sometimes they can be unhealthy so I have a healthier option for you!

Ingredients You Need To Make the Blondies

  • Eggs
  • Tahini
  • Coconut sugar
  • Almond flour
  • Coconut flour
  • Collagen peptide powder
  • Coconut oil
  • Vanilla extract
  • Baking soda
  • Dark chocolate chips- I used unsweetened dark chocolate chips, but you can use milk chocolate if you would like!

How To Make the Blondies

  1. Start by beating the eggs until they are light and fluffy. Once the eggs are beaten, add tahini, coconut oil, and vanilla extract and mix everything until they are well combined.
  2. Add the coconut sugar, almond flour, coconut flour, collagen peptide powder, baking soda to the wet ingredients and mix until batter is well combined.
  3. Fold the dark chocolate chips to the batter. Transfer the batter to a loaf pan lined parchment paper and bake at 350 degrees F for 20 minutes.

I baked the blondies in a loaf pan, but an 8×8 pan will work as well. Just don’t over-bake them!

  • 1/2 cup tahini
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 2 scoops collagen peptides
  • 1/2 tsp baking soda
  • 1 tbsp coconut oil
  • 3/4 cup dark chocolate chip cookies

Instructions
 

  • Preheat the oven to 350 degrees F and line a loaf pan with parchment paper.
