5 Ingredient Oatmeal Coconut Cookies! When some people hear the word “vegan” they think the food is tasteless, but they couldn’t be more wrong! Vegan food can be very delicious and nutritious. These cookies are only 5 ingredients. These are fun to create if you have children as well. I used raisins and chocolate chips in mine, but you can leave them out or add walnuts or even dried cranberries to them. These cookies are also great for meal prep, because they will stay fresh in the refrigerator for a week. Just heat them in the microwave for 10-15 seconds and they become soft and warm again!

5 Ingredient Vegan Oatmeal Coconut Cookies
Ingredients
- 2 cups old fashioned oats
- 1 cup apple sauce
- 3 tablespoon toasted coconut flakes
- 2 tablespoon coconut oil
- 1 teaspoon cinnamon
- raisins and chocolate chips (optional)
Instructions
- Preheat oven to 350° F.
- Mix all of the ingredients together.
- Using an ice cream scoop, form balls and roll in coconut flakes. Place on the tray and transfer to oven.
- Bake for 15-20 minutes or until golden.
