Soft and chewy cookies with lots of peanut flavor and a perfect bite of chocolate in the middle!
These cookies have two of the best flavors, peanut butter and chocolate. They are simple, quick, and easy to bake. If you have children, they will love baking these cookies with you!
Ingredients
Peanut butter- I used unsalted creamy peanut butter, but you can use salted. I recommend using a good quality peanut butter.
Chocolate kisses- I used the classic Hershey Kisses for my cookies. You can the holiday edition and get that red color in your cookies, or use the classic ones like I did. If you use the red and white with peppermint flavors, it wold be fun to add some red coloring in your dough and even some peppermint extract to really bring out the peppermint flavors.
Peanut Butter Blossoms
Ingredients
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup peanut butter
- 1 tsp pure vanilla extract
- 1 large egg
- 1 tsp baking powder
- 1 1/2 cup all purpose flour
- 30 chocolate kisses
Instructions
- In a medium size bowl, sift the flour and baking soda, whisk and set aside.
- In a large bowl using a hand mixer or stand mixer fitted with paddle attachment, beat the butter and both sugars on high speed until light and fluffy, about 3-4 minutes.
- Add the peanut butter, egg, and vanilla extract and beat until well combined.
- Add the flour mixture and beat on low speed until well incorporated.
- Cover the dough with plastic wrap and chill for 30 minutes.
- Preheat over to 375 degrees F and line a baking sheet with parchment paper.
- Using a small ice cream scoop or tablespoon, roll dough into small balls, about 1 inch. Roll the balls in sugar and place on baking sheet.
- Bake for 7 minutes or until slightly browned on bottom.
- Remove the cookies from oven and press the chocolate kiss in the center of the cookies and bake for additional 3 minutes. The cookies will crack and that is okay!
- Remove the cookies from the oven and allow them to cool before moving them or enjoying!
