Amaretti Cookies

Amaretti Cookies originated in Venice, Italy in the early 18th century. These cookies are like Italian macarons! The cookies are crispy on the outside and soft inside. These cookies are gluten free and use very minimal ingredients. They are perfect for the holidays and would make a great hostess gift.

The cookies take only few minutes to put together so they are a great cookies for beginners and for those that dont want to spent hours in the kitchen baking!

Dry ingredients:

  • Almond flour
  • Granulated sugar
  • Salt
  • Confectioner’s sugar

Wet ingredients:

  • Egg whites
  • Lemon juice
  • Almond extract

Ingredients
  

  • 2 egg whites
  • 2 1/2 cup almond flour
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tsp almond extract
  • 1/8 tsp salt
  • confectioner's sugar (optional)

Instructions
 

  • Preheat oven to 300 degrees F and line a baking pan with parchment paper.
  • In a medium size bowl, add almond flour, salt, sugar and mix until well combined.
  • In a standing mixer or using a hand mixer, mix egg whites with lemon juice until it holds a soft peak.
  • Add almond extract to the egg whites and lemon juice and mix.
  • Add the wet ingredients to dry ingredients and fold the mixture until well combined.
  • Using a small ice cream scoop or teaspoon portion out the dough.
  • Roll each cookies into small balls and roll into powdered sugar and place on the baking sheet.
  • Bake the cookies for 30-40 minutes or until slightly golden. Mine baked at exactly 35 minutes.

Notes

I had to roll my cookies in the powder sugar twice because the dough will absorb the sugar by the time you’re doing rolling the cookies into balls! You can add lemon zest to the recipe and even sliced almonds on top of the cookies.
