Double Chocolate Chip Cookies

Chocolate, chocolate, and more chocolate! These cookies are soft, chewy, gooey, and very chocolaty and basically a chocoholic’s dream!

These cookies will be your next favorite cookies, because:

  • Chocolate overload! The cookies are rich in chocolate. I used dark, semi-sweet, and even white chocolate in mine, but you can use whichever you want or have in your pantry.
  • Ingredients- the cookies are baked with simple and pantry stable ingredients. Almond flour, coconut sugar, eggs, are the main ingredients in this recipe.
  • Easy and simple- you only need one bowl to mix everything together.

How To Make The Cookies

  • Melt the chocolate! Add the dark and semi-sweet chocolate in a microwave safe bowl. Add the coconut oil to the chocolate chips and microwave at 30 seconds intervals, stirring occasional. Once the chocolate is melted, set it aside and let it cool.
  • Using a stand mixer or hand mixer, mix the eggs until they are light and fluffy.
  • Add the coconut sugar to the eggs and continue mixing.
  • Add the vanilla extract and mix.
  • Slowly add the melted chocolate and mix.
  • Add the almond flour, baking soda, and cacao powder to the wet ingredients and mix until the batter is mixed.
  • Finally fold the chocolate chips to the batter.
  • Bake for 10-12 minutes!

Ingredients
  

  • 2 eggs
  • 1 cup coconut sugar
  • 1/2 cup almond flour
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F and line a baking pan with parchment paper and set aside.
  • To melt the chocolate, add the dark and semi-sweet chocolate in a microwave safe bowl. Add the coconut oil to the chocolate chips and microwave at 30 seconds intervals, stirring occasional. Once the chocolate is melted, set it aside and let it cool.
  • Using a stand mixer or hand mixer, mix the eggs until they are light and fluffy.
  • Add the coconut sugar to the eggs and continue mixing.
  • Add the vanilla extract and mix.
  • Slowly add the melted chocolate and mix.
  • Add the almond flour, baking soda, and cacao powder to the wet ingredients and mix until the batter is mixed. Finally fold the chocolate chips to the batter.
  • Using an ice cream scoop or spoon, scoop out the dough and place on the parchment paper. Place the cookies 2-3 inches apart so they'll have room while baking.
  • Bake the cookies for 10-12 minutes or until the edges become crispy. Allow the cookies to completely cool before enjoying!
